Mushroom samosa



 Samosas are the most popular snack in india. There are many varities of samosa , variation is in the filling used.   It is easy to make samosa within few minutes.
Requirements :
For samosa pattis :
Wheat flour – 1 cup
Salt
Water
Oil – for frying
For mushroom filling :
Mushroom – 1  cup
Chilli powder – 1 tsp
Coriander powder – 1 tbs
Cumin powder – 1 tbs
Garam masala – 1 tsp
Sugar – 1 tbs
Onion – 1
Tomato – ½ cup
Oil – 1 tbs
Salt as required



Method :
 Knead the flour with salt and required oil.
For filling :
 Heat oil in a pan, add the thinly sliced onion and sauté well till translucent.
Add the chopped tomatoes and sauté  till fully mashed.
Add the chilly powder , cumin powder and coriander powder. Mix well.
Add the chopped mushrooms and sauté well.
Add the garam masala , salt , sugar and mix well till raw smell leaves.  
Mushroom Filling is ready.
Making samosa :
Take a small ball of the dough , roll into thin chappati.
Cut into rectangle strips.
Take a rectangle strip , place the filling and do as shown in the picture ( check onion samosa ).
Seal the edges using a paste made of plain flour and water.
Deep fry in oil on slow flame till golden brown .
Mushroom samosas are ready to serve.
Serve with tomato ketchup.

Stuffed chilas and 400 th post


  I am happy to post my 400th post. this time i am posting a chaat recipe as my 400 th post.

   Chilas are pancake made with besan flour. In this the pancake are topped with peas , potato and tomato , served with chutney.
  Panner can be used instead of potato. 
Requirement :
Besan flour – 1 cup
Asafetida -  a pinch
Oil – 1 tbs
Salt as required
For stuffing :
Cubed potato – 1 cup
Green peas ( boiled ) – 1 cup
Tomato ( chopped ) – ½ cup
Chopped coriander – 2 tbs
Chaat masala – 1 tsp
For serving :
Green chutney – ¼ cup
Sweet chutney – ¼ cup

Method :
For chilas :
Mix the besan flour , asafotedia , salt into a thin batter using enough water.
Heat the griddle and grease with oil.
Pour a ladle full of batter and spread into thin pancake.
Cook on both sides on medium flame.
For stuffing :
Heat oil , sauté tomato for 2 minutes.
Add the peas , potato , chaat masala and salt.
Sprinkle coriander leaves.

For serving :
Place a chila on the serving plate.
Spread the stuffing on one corner and close the chila.
Spread the chutneys on top and serve.






Vada pav



 This can be called as Indian burger . it is the popular indian street food. In this vada made of spicy potato filling deep fried served along with garlic chutney and bread. Usually square breads are used , but I used the burger bun.
Requirements :
Burger bun – 4
Dry garlic chutney – 2 tbs
For vada :
Besan flour – ½ cup
Cooking soda – a pinch
Salt to taste
Oil for frying
For filling :
Boiled and mashed  potato – 1 cup
Green chillies – 2
Ginger – ½ tsp
Garlic – ½ tsp
Turmeric powder – ¼ tsp
Salt as required
Oil – 1 tsp

Method :
For vada filling :
Heat oil , add the ginger , garlic and green chilles . sauté well.
Add the potatoes , salt and turmeric powder.
Mix well for few minutes.
Remove from  flame and cool.
Make into round balls.

To make vada:
Mix besan flour , salt ,cooking  soda with required water into bajji consistency.
Dip each of the round potato filling in this batter and deep fry in oil till golden brown.
Serving :
Slice each bun and toast with butter.
Spread garlic chutney inside the bun .
Place the bun on one half and cover with other half of bread.
Vada pav is ready to serve.

Tomato chaat



 This is a simple chaat with a few ingredients. Tomato is rich in carotene and calcium. It is good to have it raw.
Requirements :
Tomato slices  - 6
Sev – 1 tbs
Chopped onion – 1 tbs
Sweet chutney – 1 tbs
Green chutney – 1 tbs
Pomegranate – 1 tbs
Roasted peanut – 1 tbs
Boondhi – 1 tbs
Coriander leaves

Method :
Arrange the tomato slices in the serving plate.
Spread the chutneys on top of the tomato slices.
Sprinkle the boondhi , onion and sev on top.
Sprinkle peanut and pomegranate.
Garnish with coriander leaves.
Tomato chaat is ready to serve.

Biscuit sev puri



  Sev puri is normally served using the papdi . In this I used salt biscuit as the base. It is simple and easy to make.
 Requirements :
Salt biscuit – 6
Potato cubes – 12
Chopped tomato – 1 tbs
Chopped onion – 1 tbs
Pomegranate – 1 tbs
Sev – 1 tbs
Sweet chutney – 1 tbs
Green chutney – 1 tbs
Coriander leaves

Method :
Arrange the biscuits in the serving tray.
Place the potato cubes on the biscuit.
Sprinkle onion and tomato on the top.
Sprinkle the chutneys.
Sprinkle the sev  and coriander leaves.
Serve immediately.

Sev Boondhi ke Bhel



  This chaat is a combination of sev and boondhi with other chaat components. It is simple and easy to make.
Requirements :
Sev – ½ cup
Boondhi – ½ cup
Chopped onion – 2 tbs
Sweet chutney – 1 tbs
Green chutney – 1 tbs
Chopped tomato – 1 tbs
Roasted Peanut - 1 tbs

Method :
In a large bowl , mix the sev , boondhi , onion , groundnut and tomato together.
Transfer into serving plate.
Sprinkle the chutneys , sev , onion and coriander leaves.

Aloo mattar chaat



 This spicy and healthy potato peas chaat will be healthy snack. It can be made within few minutes when the ingredients are ready in hand.
Requirements :
Potato cubes – 2 tbs
Cooked peas – 4 tbs
Garam masala – ½ tsp
Imli chutney – 1 tsp
Green chutney – 1 tsp
Sev – 1 tsp
Chopped tomato – ½ tsp
Pomegranate – 1 tsp
Chopped onion – 1 tsp
Oil – ½ tsp

Method :
Heat oil in a pan , add the peas and potato cubes . sauté till golden brown.
Add the garam masala and required salt. Mix well.
Transfer into serving plate.
Spread the chutneys on top.
Sprinkle onion , tomato , pomegranate and sev.
Serve hot.

Biscuit vegetable chaat



 This chaat is slight a variation of biscuit chaat. In this I used carrots to make it more healthy.
Requirements :
Sweet biscuit – 4
Sev – 1 tbs
Grated carrot – 1 tbs
Imli chutney – 1 tbs
Mint leaves
Garlic chutney – 1 tbs

Method :
Arrange the biscuits in the serving plate.
Spread the chutneys on the biscuit.
Sprinkle sev and carrot.

Garnish with mint leaf.
Serve immediately.

Honeyed papaya



 This will be simple and healthy recipe. Papaya are low in calorie , no cholesterol. It contains a lot of phytonutrients , minerals and vitamins. It is rich source of vitamin – A , essential for vision.
Requirements :
Ripe and firm papaya pieces
Honey as required

Method :
Remove the skin of the papaya.
Cut into diamonds or any desired shape.
Arrange in serving bowl.
Drizzle honey on top.
Serve chilled.

Dates Roll



  This recipe is a bookmarked recipe. I combined both the recipes of chef  sanjeev kapoor and food mazza.
It is easy to make and healthy sweet. It will be appealing to eye.
Requirements :
Dates – 1 cup
Pista – ½ cup
Cashew – ½ cup
Badam – ½ cup
Walnut – ½ cup
Poppy seeds – 2 tbs
Ghee – 1 tsp

Method :
Chop all the nuts.
Chop the dates .
Heat the pan and dry roast the nuts , keep aside.
In the same pan , add the ghee and chopped dates.
Sate well till the dates became soft.

Now , add the roasted nuts and mix well.

Let it cool.
Shape in to cylindrical shape.

 the poppy seeds in a flat plate.
Roll this dates cylinder on poppy seeds. They will stick to the roll.

Refrigerate for ten minutes.

Slice the roll into thin slices and serve.

Dates roll is ready to serve. 




Note :
 It can be stored for 10- 15 days when refrigerated. In room temperature for 4 days.

Biscuit chaat



 This chaat will be easy to make with the available biscuit. As there is no cooking in this chaat , easy to prepare within minutes. My sister Anu gave me this idea and prepared it for me.
Requirements :
Salt biscuit – 5-6
Sweet chutney – 1 tsp
Green chutney – 1 tsp
Onion ( chopped ) – 1 tbs
Tomato ( chopped ) - 1 tbs
Sev -  1 tbs


Method :
Place biscuits in the serving plate.
Apply the sweet chutney and green chutney on top.
Spread onion on the chutney.
Sprinkle sev and serve immediately.

Dabeli



  This will be a indianised burger, it is a variation of vada pav.
 In this  bread is stuffed with a sweet and spicy potato mixture topped with onion , pomegranate and sev.
Requirements :
Burger bun – 10
Butter
For filling :
Mashed potato – 1 cup
Cumin seeds – ½ tsp
Dabeli masala – 2 tsp
Imli chutney – 2 tbs
Oil – 2 tsp
Salt as required
To serve :
 Chopped Onion
Roasted peanuts
Chopped coriander
Sev
Fresh pomegranate
Fresh garlic chutney
Khajur imli chutney

Method :
Filling :
Heat oil in a pan, add the cumin seeds , wait till it splutters.
Add the mashed potato , salt and dabeli masala , mix well.
Add about half cup of water and cook for five minutes.
Remove from flame , add two table spoon of imli chutney and mix well.

To serve :
Slice the burger bun into halves horizontally and toast using butter.
Place the bottom portion of the bun on serving plate.
Spread the filling followed by sprinkle onion , peanuts ,coriander, sev , pomegranate and chutneys.
Sandwich it with the top half of the bun.
Serve immediately.




Dahi channa chaat



  This chaat is a combination of chickpea and curd. It is a mild spicy snack with the goodness of curd. In hindi dahi means curd
Requirements :
Cooked channa – 1 cup
Fresh Curd – 1 cup
Garam masala – ½ tsp
Pomegranate – 1 tbs
Roasted peanuts – 1 tbs
Sev – 1 tbs
Green chutney – 1 tsp
Salt as required

Method :
Beat the curd with garam masala and salt.
Add the cooked channa and mix well.
Transfer into serving plate.
Spread green chutney.
Sprinkle peanut , pomegranate and sev.
Garnish with coriander leaves.
Serve immediately.

Palak channa chaat



 This chaat is a combination of spinach and chickpea. It is healthy as spinach contains iron and chickpea rich in protein.
Requirements :
Spinach leaves – 10
Green chilly – 2
Garlic – 2 cloves
Ginger – 1’’ piece
Oil – 1 tsp
Channa ( cooked ) – 1 cup
Onion – 2 tbs
Imli chutney – ¼ tsp
Garlic chutney – ¼ tsp
Sev – 1 tsp

Method :
Grind spinach , garlic , ginger and green chilly to a fine paste.
Heat oil , add a tablespoon  of onion and sauté well.
Add the grounded puree and mix well.
Add the required salt and cook till raw smell leaves.
Now , add the cooked channa and cook for two minutes.
Transfer into the serving plate.
Spread the chutneys , onion and sev.
Palak channa chaat is ready to serve.
