I love to have crispy paniyaram. While having
paniyaram I won’t think about diet. This multigrain paniyaram is a combination
of different grains. It tastes great with plain dhal curry.
Requirements :
Parboiled rice – 1 cup
Finger millet ( Ragi ) – 1 cup
Foxtail millet ( Thinai ) – 1 cup
Sorghum ( cholam ) - 1 cup
Urad dhal - ¼ cup
Fenugreek – ½ tsp
Oil
Salt
Tempering :
Oil – 1 tsp
Onion – 1
Green chilly – 5
Mustard seeds – ½ tsp
Curry leaves
Method :
Soak rice and grains for
two hours.
Grind into a smooth batter
along with required salt and allow to ferment for overnight.
Heat a pan add oil ,
mustard seeds wait till it splutters.
Add onion , green chilly
andcurry leaves . sauté well. Add this tempering to the batter.
Heat the paniyaram pan ,
add oil to each hole, pour batter.
Cook on both sides.
Serve with chutney of your
choice.
