Carrot spinach paratha


 As all know both carrot and spinach are good for our health. Carrot is rich in vitamin A and spinach is rich in iron. I want to combine both together and make a healthy paratha. This is a simple and easy to make paratha.
Requirements :
Whole wheat flour – 2 cup
Grated carrot – ½ cup
Spinach leaves – 10
Chilly powder – ½ tsp
Salt as required
Water
Oil
Method :
Wash and finely chop the spinach.
In a large bowl , add the wheat flour , grated carrot , chopped spinach , chilly powder , salt and mix well.
Add the required water and make a soft and firm dough.
Rest the dough for 30 minutes.

Take a small ball of dough and press into a thin round paratha.
Heat the griddle and cook the paratha with a spoon of oil.
Carrot spinach paratha is ready to serve.
Serve with dal / any gravy.

Groundnut Rice


Groundnuts are one of the ancient crop still in use. These are a good source of niacin , folate , fiber , magnesium , vitamin E , manganese and phosphorous. Groundnut  can be used in any form as a whole or grounded.
This rice preparation is simple and easy to make. This rice will be a perfect lunch box recipe.

Requirements :
Cooked rice – 2 cup
Groundnut – ½ cup
Onion – 1
Chilly powder – 1 tsp
Mustard seeds – ½ tsp
Curry leave – a sprig
Oil – 1 tsp

Method :
Dry roast the groundnuts and crush coarsely .
Heat oil , add the mustard seeds and wait till it splutters.

Add the chopped onion and sauté well till translucent.

Add the curry leaves and cooked rice , sauté for five minutes.
Add the required salt and mix well.

Add the chilly powder and groundnut powder and mix well.
 Cook in low flame for five minutes.

Stir well.
