PAKARE BAIGAN (EGG PLANT GRAVY)


            This is a Punjabi dish. Baigan in hindi refers to brinjal / egg plant.
Ingredients:
Brinjal - 5 -6
Onion  -2
Tamarind paste           - 2tbsp
Chilli powder  --  2 tbsp
Coriander powder     --  1 tbsp

To grind:
Sesame seeds   - 1tbsp
Peanuts            -2 tbsp
(groundnut)
Coconut           - 4 tbsp

Method:
*        Cut brinjal in to four halves.
*        In a pan heat oil and fry brinjals till golden brown.
*        Heat tbsp oil in a pan and add onion, curry leaves, onion and sauté.
*        Add fried brinjal, chillypowder and coriander powder, tamarind paste along with little water and allow to cook.
*        Then add grounded paste and allow to boil. Garnish with coriander leaves.
*        Serve hot with roti and rice.

CHOW- CHOW GRAVY



Ingredients:
Chow-chow          --   1
Small onion         -- 10 -20
Tomato                 --  2
Garlic                -- 5 flakes
Ginger             -- small piece
Chilli powder  --  2 tbsp
Coriander powder     --  1 tbsp
Garam masala         -- ½ tbsp
Coconut           --  ½  cup
Method:
*        Grind onion, garlic, ginger.
*        Heat pan, add oil, sauté the grounded onion, garlic, ginger mixture.
*        Add the cubed chow-chow and sauté for few minutes.
*        Add chopped tomatoes then chili and coriander powder and allow to cook along with little water.
*        When chow-chow becomes tender adds garam masala and grounded coconut and allow to boil.
*        Garnish with coriander leaves.
*        Serve hot with idly, dosa and chappati.
