Navarattan korma (kurma)



Navarattan  kurma is one of my favorite of mughalai cuisine. Navarattan means nine gems ( precious stones ). In this kurma , there are nine elements includes vegetables and fruits. This gravy is a perfect accompaniment to naan , roti or pulov . 

Requirements :
Carrot  - ½ cup
Beans – ½ cup
Peas ( cooked ) – ½ cup
Potato (cook n cubed) – ½ cup
Cauliflower - ½ cup
Capsicum – ½ cup
Panner – ½ cup
Grapes / Raisins – 100 g
Apple  -  1( optional )
Curd – 1 cup
To grind :
Masala 1 :
Grated coconut – 2 handfull
Onion  - 1
Ginger  - 2” piece
Garlic – 8 cloves
Coriander seeds – 2 tbs
Poppy seeds – 3 tsp
Cumin seeds – ½ tsp
Red chilly – 10
Masala  2 :
Cinnamon – 4” piece
Cloves – 6
Cardamom – 6
Peppercorns  - 10
Masala 3 :
Almonds – 10
Cashew – 10
Method :
Heat kadai  , add butter / ghee. Add grounded masala 1 and sauté for few minutes till ghee comes on top.
Add beaten curd and allow to boil.

Add potato , peas ,carrot , beans , cauliflower and bellpepper.

Then add diced panner , masala 2 and 3.
Allow to cook in simmer for few minutes.
Before serving add grapes and chopped apple (optional).

Variation : can add fresh cream before serving.
