Mixed vegetables and soya chunks pulov



  This pulov will be best choice for lunchbox. It tastes great and also healthy.
Requirements :
Mixed vegetables
( carrot, beans , peas ,cauliflower , potato ) – 1 cup
Soya chunks – 200 g
Rice – 2 cup
Mint leaves – ½ bunch
Coriander leaves – ½ bunch
Ghee -  2 tbs
Bay leaf -1
Onion - 1
To grind :
Ginger – 1’’ piece
Garlic – 6 cloves
Green chilli – 6
Cloves – 2
Cinnamon – 1’ piece
Cardamom -1
Aniseeds – ½ tsp


Method :
Soak soya chunks in hot water for five minutes and squeeze the water out.
 Heat rice cooker add ghee followed by bay leaf and onion. Sauté well till translucent.
Add vegetables, soya chunks  and sauté well.
Add the grounded masala and cook till raw smell leaves.
Add rice, coriander leaves, mint leaves and sauté well.
Add four cup of water and cook for two whistles.
Serve with raita.
Note : can add fried cashews on top before serving.
