Sindhi Tomato curry



  This was a tomato curry was the sindhis . This tastes similar to the tomato kulambu what we make , but we won't add vegetables to it.




 Sindhi are a sindhi speaking ethnic group native to the sindh province of Pakistan. The food of these people is referred as sindhi foods. This curry is one of the sindhi foods.






  This was new to me , as it has different vegetable combination cooked in tomato puree.  This was a yummy combination of vegetables and tomato puree.It tasted great with plain rice.

Requirements :
Tomato – 5
Cluster beans – 10
Ladys Finger – 5
Potato – 1 large / 2
Green Chilli –  3
Turmeric powder – ¼ tsp
Besan flour – 3 tbs
Curry leaves – a sprig
Oil – 1 tsp
Cumin seeds – ¼ tsp
Mustard seeds – ¼ tsp
Sugar – 1 tsp
Salt as required

Method :
Boil about two cups of water in a vessel , add the tomato and cover with a lid , let it be for few minutes – Blanching.
Let it cool.
Peel off the skin and grind in to a fine puree.
I didn’t remove the skin , I used as it is to make the puree.
Chop the okra , potatoes and cluster beans.
Heat oil in a pan , add the mustard seeds and cumin seeds , let them crackle.

Add the chopped green chillies and curry leaves , sauté for a minute.
Add in the chopped vegetables and sauté for two minutes.
Now ,add the tomato puree and mix well.
Add in the required salt , turmeric powder , a spoon of sugar and a cup of water. Let it cook in the medium flame.

In the mean time , mix the besan flour in half cup of water without any lumps.
When the vegetables are cooked , add in this the besan mixture and keep stirring.

The curry will thicken after adding the besan, cook for five minutes and take off from flame.

Sindhi tomato curry is ready to serve.
Serve with plain rice.
