Kachori
are famous north Indian snack . I had made two kachoris already check out my

kachori was made with the spicy potato filling .
The filling can be of any choice.
The kachori are prefixed with what filling is used. There are many varities of
kachoris , out of all these the famous is khasta kachori. I has to yet make it.
Requirements :
For outer layer :
Maida – 2 cup
Oil – 4 tbs
Salt as
required
Water
For potato filling :
Potato – 5
Green chillies – 4
Mint leaves – few
Ginger – 1’’ piece
Chilli powder – 2 tsp
Coriander powder – 1 tsp
Garam masala – ½ tsp
Salt as required
Oil for frying
Method :
Making of outer layer :
In a bowl , add the maida , salt , oil and mix
well.
Sprinkle little water at a time and knead into a
soft smooth dough.
Cover the dough and let it rest till the filling
is made.
Making of Potato filling :
Pressure cook the potatoes and peel the skin.
Chop the green chillies , ginger and mint
leaves.
Mash the potatoes and add into a bowl.
Add in the chilli powder , coriander powder and
garam masala to it.
Add in the required salt , chopped green
chillies , ginger and mint leaves.
Mix all together and make into small balls of
equal size.
Making of Kachori :
Knead the dough and make into round balls.
Take a dough ball and press with the fingers to
flatten it.
Place the potato filling in the center .
Cover on all the sides by bringing the edges to
the center and seal tightly.
Flatten again into medium size.
Repeat with the remaining dough and filling.
This can also be done by using the rolling pin ,
but I find making by hand is easy.
Heat the oil and deep fry in medium flame.
When the kachoris become golden brown , take out
and serve warm.
Crispy potato kachoris are ready to serve.
