Senai kilangu as called in Tamil is name
of Yam , edible tuberous plant. Yam has
the protein content same as in the potato. It is rich in phenylalanine and
threonine .
Yam is high in vitamins C and B6 ,
potassium , manganese and dietary fiber while being low in saturated fat and
sodium . A product that is high in potassium and low in sodium is likely to
produce a good potassium sodium balance in the human body and so protect
against osteoporosis and heart disease.
This gravy was so delicious with roti. It can be
served along with plain rice or Jeera rice.
Requirements :
For kofta :
Yam – 200 g
Besan flour – 1 tbs
Corn flour – 3 tbs
Green chilli – 1
Chilli powder – 1 tsp
Coriander powder – ¼ tsp
Turmeric powder – ½ tsp
Salt as required
Oil for frying
For Gravy :
Onion – 2
Tomato – 2
Curd – 1 cup
Green chilli – 3
Ginger – 1’’ piece
Garlic – 4 cloves
Cinnamon – 1 stick
Cloves – 2
Grated coconut – 2 tbs
Aniseeds – ½ tsp
Cumin – ½ tsp
Coriander powder – 1 tbs
Garam masala – 1 tsp
Chilli powder – ½ tsp
Turmeric powder – ¼ tsp
Cashew – 4
Oil – 1 tbs
Cumin seeds – ¼ tsp
Method :
Making of kofta :
Peel the skin of the yam , wash and chop into
small pieces.
Cook with required water and
turmeric powder ¼ tsp salt.
Add the cooked yam to a bowl and
Mash the yam well.
To this add the besan flour , corn
flour , chilli powder , coriander powder , chopped green chillies and salt , mix well .
If it was sticky add more corn
flour , and shape into small round balls.
Heat oil in a pan , deep fry these shaped koftas in medium flame till golden brown.

Yam koftas are ready.
For gravy :
Grind the onion , tomato , cashew ,
cumin , green chilli , ginger , garlic , coconut , cinnamon , cloves , aniseeds
into a fine paste.
Heat oil in a pan , add the cumin
and let it splutter.
Then , add the grounded masala and
sauté well.
Add in the turmeric powder , chilli
powder , coriander powder and required salt , mix well.
Add about a cup or more water and
let it boil.
Now , add the garam masala and boil
once.
Some koftas can be reserved to add
just before serving to taste the crunchy koftas.
Add the koftas just before serving
or else the koftas will be soggy in the gravy.
