Potato Koftas in Spinach Gravy









  This is another delicious kofta gravy . In this recipe delicious potato koftas are soaked in the spicy spinach gravy. This gravy goes well with plain rice , roti / phulka.





 Spinach has a high nutritional value and is extremely rich in antioxidants . It is a rich source of vitamin A , C , E ,K and B6 , magnesium , manganese , folate , betaine , iron , vitamin  B2 , calcium , potassium , folic acid , copper , protein , phosphorous , zinc , niacin , selenium and omega – 3 fatty acids.



  Potato is a good source of nutrients to human . Human can survive healthy on a diet of potatoes supplemented only with milk or butter , which contain the vitamin A and D not provided by potatoes.



Potatoes contain vitamins and minerals , as well as an assortment of phytochemicals , such as carotenoids and natural phenols. It also contains vitamin C , potassium , vitamin B6 , thiamine , riboflavin , folate , niacin , magnesium , phosphorous , iron and Zinc. The potato is best known for its carbohydrate content which is mainly as starch.
Potatoes are high on glycemic index , so those who are following low glycemic index diet has to avoid it.
   
 This gravy is a healthy combination of both spinach and potatoes. 

Requirements :
For Gravy :
Spinach – 2 bunch
Onion – 2
 Tomato – 3
 Ginger – 1’’ piece
Garlic – 6 cloves
Green chilli – 4
Cinnamon – 1 stick
Cloves – 3
Aniseed – 1 tsp
Chilli powder – ¼ tsp
Garam masala – 1 tsp
Oil – 2 tbs
Cummin – ¼ tsp
Salt as required
For kofta :
Potatoes – 2
Bread slices – 4
Garam masala – 1 tsp
Chilli powder – ½ tsp
Besan flour – 1 tbs
Green chillies – 2
Coriander powder – ½ tsp
Aniseeds - 1/4 tsp
Chopped Coriander leaves – 1 tbs
Salt as required
Oil for frying









Method :
The koftas can be eaten as snack , it was so delicious . i added besan flour for taste and binding.
For koftas :
Boil the potatoes and peel the skin.
Add this to a bowl and mash well.
Add in the chopped green chillies , coriander leaves , chilli powder , coriander powder , garam masala , aniseeds , besan flour and salt. Mix well.
Add the chopped bread slices and mix well to form a dough like consistency.

Make into round small balls .
Deep fry the shaped balls in hot oil at medium flame till golden brown.
Potato koftas is ready.
I munched few while it was hot , it was so delicious.
For gravy :
Blanch the spinach in warm water and then wash in cold water.
Drain the water out.

Heat a spoon of oil, add the cinnamon, cloves , aniseeds and let it fry.
Add in the chopped onion, ginger, garlic, tomato and green chillies, sauté well.

Let it cool and grind along with the blanched spinach into a fine paste.

Heat the remaining oil and add the cumin and wait till it splutters.
Add in the grounded puree and cook till oil separates on top.

Add in the chilli powder,  garam masala and required salt .
Add about a cup of water and let it boil.
Now , add the fried koftas , let it simmer for two minutes and serve.

Reserve some koftas to add just before serving.










Potato koftas in spinach gravy is ready to serve.
Serve with roti , naan , phulka or plain rice.
