Cashew semolina cookies


 This is an easy and flavorful cookie .There  are only few ingredients needed to make this lovely cookies. It was a huge hit in our family. It will be perfect snack for this holiday season.
 Requirements :
Wheat flour – 2 cup
Semolina – ½ cup
Sugar – ½ cup
Cashew powder – 2 tbs
Butter – 2 tbs
Baking powder – ½ tsp
Baking soda – a pinch
A pinch of salt
Water as required


Method :
 Sift the flour , baking soda and baking powder together.
Mix butter and sugar together till fluffy.
Add the flour little by little and mix well.
Add the salt and semolina , mix well.
At  this stage the mixture will look like a crumble.
Sprinkle little water and make into a soft dough.
Let the dough rest for 30 minutes.
Preheat the oven to 180 degree celsuis.
Make small balls of the dough and place them on the baking dish with about 2 cm gap in between..
By using a fork press each ball , it will give the cookie a striped impression.
Bake in the oven for 15 – 20 minutes.

Let it cool and store.
Cashew semolina cookie is ready to serve.



Note :
 I didn’t added any flavouring agent , can use if wanted.
Adding semolina will give the cookie a lovely texture.
