Eggless Beet cake



  Cakes will be everyones favorite. Everyones like will be different. I always bake eggless goodies only , this beet cake is also made without egg.
   When I were in school , I thought cakes can be made only by using eggs if not it is not a cake at all . 
    I love cake a lot , due to health conscious avoids these days. So I thought if I bake on my own , I can limit the use of sugar , there by the cake will be low in calorie.
   Used beetroot in this cake because I don’t want to add any artificial colour as well as it makes the cake healthy by reducing the use of sugar.
Requirements :
All purpose flour – 2 cup
Beet root – 250 g
Sugar – 1 ½ cup
Baking powder – 2 tbs
Baking soda – 1 tsp
Butter – 150 g
Vanilla essence – 2 drop
Milk – 1 cup

Method :
Remove  the beetroot  skin and cut into large pieces , cook for ten minutes.
Grind the cooked beetroot into a fine paste – Beetroot puree.
 If you want , add some of the chopped beetroot pieces.
Sift the flour , baking powder and baking soda twice or thrice.
In a bowl beat  butter and sugar till fluffy.
Add the beetroot puree to the butter mixture and beat well.
Now ,add the vanilla essence and mix well.
Add the flour little at a time  and gently mix .
Mix the batter gently for a minute.
Preheat the oven to 180 degree Celsius.
Grease the baking tray with butter and dust with flour.

Pour the cake batter to the greased tray.
Bake for 40 – 45 minutes or till the tester/ tooth pick comes out clean.

Let the cake to cool for one hour.
Decorate according to your wish.

I dusted the icing sugar – simple decoration.

Note :
Sifting the flour is important to get the right texture of the cake.
If you like the beetroot flavor , can avoid using the essence.
