Dates Pinwheel Cookies

  I love to have cookies a lot . As the cookies are easy to make with simple ingredients , I always prefer cookies than cake.

 This pinwheel cookie is another recipe which is made with easily available ingredients. It is healthy too.

Requirements :

Maida / All purpose flour – 2 cup

Butter – 2 tbs

Sugar – 1 tsp

Baking powder – ½ tsp

Milk – 2 tbs

Dates  - 200 g

Ghee – ½ tsp

Method :

Mix butter , sugar and baking powder well till it becomes fluffy.

Add the flour little by little and mix well.

Add the milk and knead into a soft dough.

Let it rest for ten minutes.

In the mean time , chop the dates into fine pieces.

Melt the ghee in a pan and sauté the dates till it becomes soft and mashed.

Let the dates filling cool.

Take the dough and press it with roller into thin chappati.

Spread the dates filling evenly on the pressed chappati.

Roll into a cylinder and refrigerate for 15 minutes.

Preheat the oven to 180 degree Celsius.

Cut the cylinder into small round cookies.

Bake for 20 minutes and let it cool.

 Store in airtight container.

Dates pinwheel cookies is ready to serve.

The outer layer will be crisp and dates filling will be chewy.
