Thattai are round crispy snack
famous in tamil nadu. It will be easy to make . It tasted great. i tried this for the first time and the out come was good.
Requirements :
Rice flour – 2 cup
Urad dhal - ½ cup
Roasted gram dhal / pottukadalai – ½ cup
Chilly powder – 2 tsp
Salt to taste
Curry leaves – 4 sprigs
Peanuts – 4 tbs
Bengal gram – 4 tbs
Oil – 2 tbs
Butter – 2 tbs
Oil for frying
Method :
Soak the Bengal gram dhal for 30
minutes.
Roast the peanuts and remove the skin.
Dry roast the urad dhal and grind into a fine powder.
Grind the roasted gram dhal and grind into a fine powder.
Dry roast the curry leaves and crushes with the hands.
Dry roast the rice flour for two minutes.
Take a large bowl , add the rice flour , urad dhal flour , gram flour,
chilly powder and salt . mix well.
Add the crushed curry leaves , soaked channa dhal and peanuts.
Add the butter and mix well.
Heat the two table spoon oil till fume comes and add to the flour mixture.
Adding hot oil makes it more crispy.
Mix well and sprinkle little water to make a soft and firm dough.
Close the dough with a soft cloth
to avoid drying.
For making Thattai :
Take a plastic sheet and grease it with oil.
Take a marble sized ball of the dough and place it on the plastic sheet.
With the fingers press the ball evenly into thin circle.
Fry in hot oil till golden brown.
Place in the absorbent paper to remove excess oil.
Repeat the same with the remaining dough.
Store in air tight containers.
Crispy thattai is ready to serve.
Note :
Adding the hot oil will make it more crisp.
You can add peanuts alone.
Roasted peanut must be used to get the crunch while biting.
