Briyani will be everyone's favorite , whether
it may be veg / non – veg according to their preference. The name briyani is
derived from the Persian word Beryá(n) which means “ fried” or “roasted”.
This briyani recipe I am sharing here is how we
make in our home i.e. my mom’s recipe. Vegetarians can substitute with the
veggies.
Requirements :
Mutton – 500 g
Cooking Rice – 2 cup
Onion – 2
Tomato – 5
Mint leaves – ½ bunch
Coriander leaves – ½ bunch
Butter – 1 tbs
Curd – ½ cup
Green chilly - 2
To grind :
Ginger – 3’’ piece
Garlic – 10 cloves
Cinnamon – 2’’ piece
Cloves -4
Aniseed – 2 tsp
Star anise – 1
Mace – 1
Marati mokku – 1
Bay leaf – 1
Method :
Wash and Soak rice for
fifteen minutes.
Wash the mutton pieces and
keep aside.
Grind the to grind ingredients
to a fine paste.
Add the grounded masala
and sauté well.
Add the chopped
coriander and mint leaves. Mix well.
Add the required salt and
mix well.
When the water boils , close the lid.
Cook for two whistles.
Serve with onion raita /
mutton gravy.
