It was so tasty with the jam filling. It is same as other cookies , the difference is the sandwiching the cutout and round cookies together.
Dusting icing sugar on top gives it a gorgeous
look.
Requirements :
All Purpose flour – 2 cup
Butter – ½ cup
Granulated Sugar – ¾ cup
Vanilla essence – few drops
Baking powder – 1 tsp
Cashew nut powder – ½ cup
Milk – ½ cup
Icing sugar
Mixed fruit Jam ( Homemade
/ store bought )
Method :
Sift the flour and baking powder together.
In a bowl , whisk the
butter and granulated sugar for ten minutes.
Add in milk and whisk well.
Add the cashew powder and
mix well.
Add the vanilla essence and
mix well.
Add the flour mixture and
make soft smooth dough.
Rest the dough in
refrigerator for 15 minutes.
Dust some flour and roll
the dough with the rolling pin. Roll in to ½ inch thickness.
With the round cookie
cutter cut into round cookies.
In the half of the round
cut cookies, with a heart cookie cutter cut of hearts in the center.
Line all the cookies in the
baking tray with 1 cm apart.
Preheat the oven to 220
degree Celsius and bake the cookies for 15 minutes.
Let the cookies cool.
Plain cashew cookies are ready.
Dust the icing sugar on
heart cut out cookies .
Assembling:
On each of the round
cookies , apply fruit jam .
Take the heart cut out
cookies and press on the jam filled round cookies.
Valentine linzer cookies
are ready to serve.
Makes two dozen cookies.
