Pav Bhaji Masala


 The masala used in making the Bhaji for pav Bhaji is known as Pav Bhaji Masala. It is available in stores.

 I always like to use the freshly ground masala . so I made the masala myself for using in the bhaji.

 This masala making is simple with few ingredients , the list may seems long .

 

Requirements :

Coriander seeds – 2 tbs

Cumin seeds – 1 tbs

Red chilli – 4

Cardamom – 2

Cloves – 6

Cinnamon – 1’’ piece

Star anise – 2

Fennel seeds  - 1 tsp

Dry ginger – 2’’ piece

Turmeric powder – ½ tsp

Dry Mango powder ( Amchur ) – 1 tbs

Garam masala powder – 1 tbs

Asafetida – ¼ tsp

Oil – 1 tsp


Method :

 Heat the oil in a pan , add the coriander seeds and cumin , stir well.

It will splutter.

Add the broken  red chillies , cardamom , cloves , cinnamon , star anise , fennel seeds , dry ginger.


Roast well in medium flame.

Let it cool.

Add the asafoetida, garam masala, turmeric powder and amchur powder.

Grind in a dry blender to a fine paste.

Cool for few minutes.

Store in the air tight container.

Pav Bhaji masala is ready to use.

 

This masala is also used in making Tawa pulov.

 I made the Pav bhaji with this freshly grounded masala .
