This eggplant recipe is a perfect combination
with plain rice and ghee. This particular recipe I like most from my mother’s
cooking. This is easy and quick to make.
My mom learnt this recipe from her mom , so this is passing through generations . It is a traditional recipe.

Ingredients:
Eggplant – ½ kg
Tomato – 4
Shallots – 10
Sambar podi – 1 tbs
Curry leaves – a sprig
Oil – 1 tbs
Mustard seeds – ½ tsp
Grated coconut – 2 tbs 9 optional )
Salt to taste
Method :
Heat oil in a pan , add mustard seeds and wait
till it splutters.
Add chopped shallots and
curry leaves . stir well.
Now , add chopped tomato
and mix well till it is mashed fully.
Add chopped eggplant ,
sambar podi and half a cup of water.
Cook under slow fire with
closed lid.
Stir in between.
Add required salt and
grated coconut (optional ) at this stage.
Serve with the steaming
rice along with ghee.
Note :
My grandmom will add grated coconut to this after it is cooked. Due to health conscious , i won't add coconut.
