Date N Walnut Loaf (Eggless )

   Date N Walnut Loaf is a traditional cake eaten in Britain, made using dates and walnuts. As this cake is made in loaf tin, the suffix loaf is added to the name.
 Traditionally, it originated in Scotland; still it is enjoyed in many tea rooms around England. This cake is served along with the afternoon tea.
 This cake is commonly called as English tea cake. Adding dates and walnut to this cake gives it a unique flavor.
Requirements :
All purpose flour – 2 cup
Powdered Sugar – 1 cup
Butter – ½ cup
Baking powder – 1 tsp
Baking soda – ½ tsp
Chopped walnut – ½ cup
Chopped dates -  ¾ cup
Butterscotch Essence – 1 tsp
Curd/ Yogurt – 1½ cup

Method :
Sift the flour with the baking powder and baking soda twice.
Mix the sugar and butter till fluffy.
Add the essence and curd , mix well.
Now , add the chopped walnut and dates , mix well.
Add the flour little by little and mix well without any lumps.
Mix for about five minutes in same direction.
Preheat the oven to 200 degree Celsius .
Grease and dust the loaf tin and pour the cake mixture.
Bake the cake for about 30 – 40 minutes or till the inserted knife comes out clean.

Let it cool for about 20 minutes.
Slice the loaf and serve with hot tea / coffee.

Note :
In the original recipe , the dates are soaked in warm water along with the baking soda overnight.
If want to use eggs , use two eggs instead of the curd.
