Pumpkin seed Brittle #RecipeRedux
For this month’s Recipe Redux the theme given
was nutty nut day recipes as the national nut day is on October 22. I first thought of making cashew curry and then changed my
mind to try this brittle.
This was the first time I am making this
brittle. My mom uses the pumpkin seeds while she makes spice powder , it gives
a different taste to the spice powder which we have along with the south indian steamed rice cake / Idli.
So using pumpkin seeds is not new to me ,
though trying a brittle with it was first time.
We removed the shell from each seed on our
own and used those pumpkin seeds to make this brittle.
A brittle is a sweet made from nus and melted sugar. This will be perfect Halloween
/ fall snack. This uses few ingredients and requires less time to make this
delicious brittle.
Requirements :
¾ cup raw hulled
pumpkin seeds
1 cup sugar
½ cup water
a pinch of salt
Melted butter to
grease
Method :
Dry roast the
hulled pumpkin seeds for 4 – 5 minutes
or till the aroma comes out.
Mix sugar and
water together and bring to boil. Add the salt to enhance the sweetness.
Cook the mixture till the syrup reaches one
string consistency .
Take off from flame and mix in the roasted
pumpkin seeds.
Pour this mixture
on to a greases tray or on a parchment paper.
Let it cool
completely and break into desired size .
Pumpkin seed
brittle is ready to be served.
Chef’s suggestion
:
Can store this brittle in room temperature for
about two weeks.
Can use any nut
of your choice.
