Karandi Muttai / Omelette Cooked in Laddle

Karandi muttai means egg omelette cooked in a large laddle. Karandi means laddle in Tamil while muttai means egg.

In our home , we are having my great grandmom’s laddle which they used for tempering. I made this omelette in that laddle . this omelette will be similar to paniyaram but large in size , as size depends on the size of the laddle used.
This recipe is simple and easy to make .
Makes - 3
Requirements :
Egg – 2
Oil – 2 tbs
Salt as required
Pepper powder – 1 tsp
Green chilli – 2
Turmeric powder – 1 tsp
Shallots – 5 – 6
Curry leaves – a sprig

Method :
Chop the shallots , green chilli and curry leaves into fine pieces.
In a bowl , add the egg and turmeric powder beat well.

Add in the salt , pepper powder and mix well.
Now , add the chopped shallots , chilli and curry leaves.
This was my Great grandma's laddle i used to make this omelette.

Heat the laddle , add a spoon of oil , pour this egg mixture till half and cook in low flame.

Turn to other side with a spoon  and cook on both sides.

Cook the remaining egg mixture in the same way.

If want gooey in the center , take few minutes before.

By using two eggs , we can make three karandi muttai.
Karandi muttai is ready to serve.
