Coriander Garlic Pull apart Bread#BreadBakers

  For this Feb 2019 the theme given by Pavani Nandula was Bake any bread from previous themes you might have missed or repeat a theme just because  you loved it that much . It's a catch up theme - you are free to bake anything , it has to be from one of the previous themes.

 I choose to bake from  April 2016 - Garlic - Bread with Garlic.  I 
made this Coriander garlic pull apart bread on a evening for my niece's snack . 






Requirements : 

 4 cup all purpose flour

2 tbs Instant dry yeast 

2 tbs butter 

1 tbs sugar 

1 tbs salt 

1 cup luke warm water 

1 cup luke warm milk 

Oil

For Topping :

4 tbs unsalted butter  

1 tbs minced garlic 

2 tbs chopped coriander leaves



Method : 

In a bowl , mix the flour , sugar ,salt and yeast together .

Add in the luke warm milk and mix well.

Add in little water at a time and knead the dough.

Knead the dough for ten minutes with hand or stand mixer.

Add the butter and knead again for two minutes.

Place the dough in a oiled bowl and cover with a damp cloth.

Let the dough rise for about two hour.

Punch in the doubled dough and divide into equal parts.

Roll each part of dough into smooth round balls and place in a

round baking pan. You can use bundt pan / ring baking pan for this.

Rest  the rolls for the second rise . In the mean time mix the butter 

minced garlic and chopped coriander leaves .

  Apply this butter mixture on each bread roll in the round baking 

tray and bake in a preheated oven for 30 minutes at 180*C.

  Let the bread cool and demould from round pan.

Coriander Garlic Pull apart bread is ready to be served. 

 Serve with any spicy dip of your choice........

    SAVORY OATS SCONES #BreadBakers



         Oats was considered as a best option for those who are on dieting and for weight watchers.



         Rolled oats are traditionally oat groats that have been de-husked, steamed and then rolled into flat flakes under heavy rollers before being stabilized by being lightly toasted. Daily consumption of oats redudes LDL ( Bad ) cholestrol and thereby the risk of heart disease.



          Oats contain more soluble fiber than

     any other grain, resulting in slower

    digestion, a feeling of satiety and 

    suppression of appetite.  





        I had joined a new group # BreadBakers and the theme for this month is oatmeal by the host Rico.


    INGREDIENTS :
    1 cup rolled oats
    1 ½ cup whole wheat flour ( Homemade )
    ½ tsp salt
    2 Tbs baking powder
    ½ tsp baking soda
    ½ cup butter
    ½ cup buttermilk
    ¼ tsp mixed Italian herbs
    1 tsp Red chilli powder 
    ½ cup chopped spinach
    4 leaves of Cuban oregano chopped




    Method :

     We make buttermilk by churning curd / yogurt , and the butter is removed and about 1 – 2 cup of water is added. I used this buttermilk in the recipe.

      There is another easy way to make buttermilk without long process -  to 150 ml of milk add about 1 ½ tbsp. of lemon juice. Mix it and let it sit for about 5 minutes. By this time , the milk will be slightly curdles. Mix again and use this in recipe .


     Preheat oven to 200 degree Celsius .







    In a bowl , add the oats , wheat flour  , baking powder , baking soda , salt and chilli powder . combine all together with a spatula.

     Add the cold butter to the flour mixture and rub it with fingertips to incorporate with the flour.


    Add in the butter milk and make a stiff dough.

    Add the mixed herbs and freshly chopped spinach and Cuban oregano to the dough and knead once.


    Shape the dough into a round disc of ¾ th inch thickness and cut into wedges .








    Arrange in the baking tray and bake for 20 – 25 minutes or till golden brown.


    I gave milk- sugar wash on the scones twice while baking.

    Cool on rack and serve.

    Delicious savory oats scones is ready to serve.






    Chef’s recommendation :

    I hadn’t use  cheese in the scones , if needed can include grated cheese before adding  buttermilk.
    Egg wash can be given instead of  milk sugar wash.
    I added the fresh herbs to increase flavor and taste.
