Steamed Eggless Banana cake



 This is an easy to make cake recipe. As it is cooked by steaming no oven is needed.
 This cake is made with simple ingredients. 
Requirements :
Maida – 1/4   cup
Wheat flour - 3/4 cup
Banana – 1
Vegetable oil -  3 tsp
Baking powder – 2 tsp
Sugar – ¼ cup
Water if required
Butter for greasing



Method :
 Grease and flour dust a dish for steaming the cake.
Mash banana with the hand and keep aside.
Sift maida and baking powder together.
Mix the vegetable oil  and sugar to the mashed banana.
In a bowl , mix the flour and banana mixture together.
If water is needed can add 2 tsp of water to make the dough.
Arrange chopped banana in the greased  tray.
Pour the mixture into the greased and dusted tray.
Place the tray in a idly cooker / pressure cooker.
If using pressure cooker don’t use whistle.
Cook for 20 - 30 minutes .
Check the cake by inserting a knife in to the center of the cake. If the knife comes out clean , the cake is well cooked.



Cool and cut into pieces.



Banana cake is ready to serve.

Banana wheat Muffins



 This is a healthy and easy to make muffins. I want to make it healthy so , used wheat flour , maida can be used. I baked it yesterday and it was a huge hit in our family.
Requirements :
Whole Wheat flour – 1 ½ cup
Baking powder – 2 tsp
Baking soda – 1 tsp
Milk – 1 cup
Butter – 2 tsp
Vegetable oil – 2 tbs
Ripe banana – 2
Brown sugar – 1 tbs

Method :
 Sift the wheat flour, baking powder and baking soda together. Keep aside.
Mash the bananas well.
Mix the butter and oil together.
Add the mashed banana and brown sugar to the butter mixture and mix well until smooth.
Slowly mix in the milk and blend well.
Mix in the wheat flour little by little and mix well to avoid any lumps.
Grease the muffins moulds and spread the mixture  into the mold to fill the moulds only half way through.
Bake in pre heated oven at 180 degree for 20 minutes.
Let it cool and remove from mould.
Serve with /without icing.
Banana wheat muffins are ready to serve.

Stuffed Banana with Honey



 This is yet another easy dessert using banana. It is simple as well as healthy.
Serves - 2
Requirements :
Banana – 2
Brown sugar – 2 tbs
Grated coconut – 2 tbs
Honey – 2 tbs

Method :
Slit the bananas longitudinally.
Mix the brown sugar with 4 tbs of water and heat in a pan.
Add the grated coconut and sauté till the mixture thickens.
Take off from flame and let it cool.
Stuff this sweetened coconut in between the banana and arrange in serving plate.
Drizzle honey just before serving.
Stuffed banana with honey is ready to serve.

Choco Banana Delight



 This will be a fantastic dessert to be served for kids. I tried this recipe from Epicurious . This was easy to prepare this dessert.
Serves - 4
Requirements :
Banana – 2
Chocolate chips / bar – 200 g
Chopped almonds – 20 g
Chopped walnuts – 20 g
Chopped cashew – 20 g
Chopped Pistachio - 20 g
Wheat biscuit  - 10
Milk – 2 tbs




Method :
Chop the banana into two equal halves. Insert a tooth pick / popsicle stick into the banana pieces.
Crush the biscuit and spread in a flat plate.
Spread the chopped nuts in a flat plate.
Mix milk with the chocolate bar and melt in double boiling method .
When the chocolate melts , take off from heat and let it cool partially.
Take each banana , dip it in the melted chocolate and coat the whole banana with the chocolate.
Roll it immediately over the biscuit and nuts.

Repeat the same with other pieces.
Refrigerate for 30 minutes and serve.
Delicious choco banana delight is ready to serve.
note :
Refrigerating condenses the choclate .
