Bhuna Khichuri / Moongdhal Kichuri



   Rice is the staple in the Asian countries. Bangladeshi cuisine too has pulao , biryani and khichuri made of rice. As I has to make vegetarian rice preparation , I thought of making  vegetarian pulao. Then changed to this rice prepared with moong dhal , this rice has become everyone’s favorite in our family. This rice is usually served by bangladeshi’s with fried Hilsha , beef rezala , omelette , Pickled  onion  alu bhorta. We had it with aloor dom.



  Some use whole moong dhal  while some use split moong dhal. Masoor dhal can be used instead of moong dhal.

Requirements :
1 cup moong dhal
2 cup Basmati rice
½ cup ghee / clarified butter
1 onion thinly sliced
1 tsp garlic paste
½ tsp ginger paste
2 green chillies
1 tsp turmeric powder
1 bay leaf
1 cinnamon stick
3 cloves
5 cup boiled water
1 tbs salt
Method :
Wash and soak rice and dhal for ten minutes.
In a deep pan  , melt ghee , add the bay leaf , cinnamon and cloves  sauté for a minute.
Add in the sliced onion and sauté till it becomes translucent.
Add  the ginger garlic paste , green chilli and sauté.
Add the soaked rice – dhal  and sauté for two minutes.
Add in salt and boiled water , close the pan with a lid and cook  for 20 minutes or till the rice is done.
The rice is ready to be served.

Serve with spicy curry  or with aloor dom.
