Chocolate Quick Bread#BreadBakers

  Today was the posting day for the Bread bakers facebook group. We a group of food bloggers bake a bread according to the theme given by the host and post on second Tuesday of each month.

  For this Month the Theme was Quick Breads by Stacy Livingston Rushton. She wanted us to bake in a Loaf pan. In her words .... Quick breads are made with rising agents like baking powder and / or baking soda , not yeast. One bowl has the wet ingredients , another the dry . When mixed together they form a soft dough or very thick batter. Your quick breads can be sweet or savory but I'd like them baked in a Loaf Pan.

  I decided to make this chocolate quick bread , as everyone in our family likes chocolate a lot. This Bread tastes similar to chocolate cake as the ingredients are similar and as usual  I make it an eggless bread by using Yogurt .

 I used Unsweetened cocoa powder and chocolate chips in this bread.You can use melted chocolate too .




Requirements : 

Two cup all purpose flour
 Half cup unsweetened cocoa powder
 Quater tsp salt
 One  cup Yogurt
 3/ 4 cup  unsalted butter
 Two tsp  baking powder
 Half tsp baking soda
 Two cup sugar 
 Half cup Milk
 Two tbs vegetable oil
 Half cup chocolate chips

Method:

 Sift the flour , salt , baking powder , baking soda and cocoa powder twice. Transfer to a wide bowl.

In another bowl , add butter and sugar whisk together.

Add the milk, yogurt  and vegetable oil , whisk well till the mixture becomes smooth.

Add this liquid mixture to the flour mixture and mix with a spatula. Fold in the chocolate chips / nuts if adding.

Grease the loaf pan with butter and pour the batter and tap the baking pan on counter top for even spread of batter. Smoothen the top with a spatula. 

 I sprinkled sugar on top before baking........

 Bake in a preheated oven @ 200*C at convection mode for 30 minutes. 





Cool on a wire rack for 30 minutes , de-mould and slice to serve.
Chocolate quick bread is ready to serve.......

    Fingermillet Brownies with sugarfree Natura - Eggless and Diabetic Friendly


      Brownie is a American dessert , became famous all over the world . It is a cross between the cake and the cookies.
       Chocolates and recipes made with chocolate are everyone’s favorite. Brownie has become a new favorite to our family. Usually I try to include millets in our meals atleast five times a week.
      Diabetic people who have a craving to sweet are unable to eat sweet due to the fear of intake of sugar. As there are Artificial sweeteners  available in markets diabetics can also enjoy their favorite desserts.



                          












    Requirements :
    1 Cup Finger millet Flour
    ¼ cup whole wheat flour
    2 tbs Rice flour
    ½ tsp baking powder
    ½  cup unsweetened cocoa powder
    ¼ tsp salt
    100 ml olive oil
    ½ cup Hung curd
    ¾  cup sugar free Natura
    ½ cup warm water
    2 tsp chocolate essence ( optional )

                                 

    Method :

     In a bowl , add the fingermillet flour , wheat flour , cocoa powder , baking powder , salt and rice flour.

    Sieve the flour mixture twice , so that all the elements combine together and to avoid lumps while mixing.

    In a bowl , whisk the hung curd along with the olive oil. Then add in the warm water and combine once.





    Add the flour mixture in the wet mixture in parts.
    Combine gently.
    Add in the sugar free natura to the brownie mixture and combine in gently.
    If using chocolate essence , mix it in this stage.
    Pour the mixture into greased square baking pan.
    Bake in a preheated oven at 200*C for 30 – 35 minutes or till the skewer inserted comes out clean.



    Let it cool and demould.
    Slice and serve along with a sugar free sauce or with a Ice cream made with sugar free.



    Finger millet brownies are ready to be served.
    Notes :

    I hadn’t used nuts while baking. If you want to add can add in chopped nuts to the mixture.

    Melted dark chocolate can be added along with the cocoa powder.

    Chocolate chip Raisin Oaties

              Christmas season had come. Every where there are sounds of the festival .  I was late to join in the celebration. So to begin , I came up with a healthy and delicious bite cookies. celebrations . 





     Christmas is a time with lots of celebration with especially cookies , cakes and pasteries. For more cookies recipe , check here.

      This was a simply healthy and easy to make cookies. This was an excellent cookie to be served for pregnant ladies , as this is healthy and less in calorie.
    Ingredients :
    Butter – 115 g
    Light brown sugar  – 115 g 
    Milk – ¼ cup
    Vanilla extract – 1 tsp
    Raisin – 1 tbs
    Chocolate chips – 150 g
    Rolled oats – 100g

    Method :
    In a bowl , mix butter and brown sugar well.
    To and raisins and mix together.
    Now , add the oats and vanilla extract , mix well.
    It will be like crumble , so add little milk at a time and try to make shapes.
    Make into small rounds and press flat with care , as it breaks easily.

    Preheat the oven to 220 * C and bake for 15 minutesthis add the chocolate
    chip.
    Let it cool and store in air tight boxes.

    Delicious eggless chocolate chip raisin oaties is ready to serve.

    Note :
     If you want to add egg to this cookies  means add a whole egg to the butter sugar mixture and mix well or beat separately and add .

    Valentines Chocolate Scones



      I made these heart shaped scones for the first time and it tasted great . It is simple and easy to make with few ingredients.
     Scone – It is a single serving cake or quick bread.  Originated in Britain .It is similar to an American biscuit usually made of wheat flour , sugar , baking powder , butter , milk or yogurt or buttermilk and sometimes eggs.
     The dough for the scones must be soft and sticky made from one part of liquid to three parts of wheat flour. This gives the scones a soft center.
    I baked the egg less scones by using yogurt.
     The original scones were round and flat , made with oats and baked on a griddle , then cut into triangle like quadrants for serving.
    They are often lightly sweetened and occasionally glazed. Nowadays various shapes are made like triangles , rounds and squares. I made heart shaped scones.
    Dry fruits like cherry , raisins , dates and cheese are also included in making scones.

     I made these scones with cocoa powder and without using cherry.

       This was my sisters suggestion to make a arrow to pierce the heart........... 


      We baked the arrow separately and arranged so is it beautiful..................

    Requirements :
    Whole wheat flour – 2 cup
    Cocoa powder – 6 tbs
    Granulated sugar – 1 cup
    Vanilla essence – 1 tsp
    Yogurt – ½ cup
    Baking powder – 1 tbs
    Baking soda – ½ tsp
    Butter – 2 tbs





    Method :
    In a large bowl , whisk butter, sugar , baking powder , baking soda together.
    Add the yogurt , vanilla essence and cocoa powder, mix well.
    Add the flour and fold in gently.
    This dough will be semi dry , turn the mixture into the kitchen counter and knead with the hands well till the mixture will form into a dough for 10 minutes till smooth dough is formed.

    Roll the dough gently with rolling pin to 2 cm thick and cut into hearts with the cookie cutter.
    Preheat the oven to 220 degree Celsius.


    Arrange the cut out scones in the baking tray with 1 cm apart.
    Bake on convection made for 20 minutes.


    Let it cool on wire rack.
    The scones will be crunchy on outside and soft on inside.


    Serve with fruit jam.

    Eggless Chocolate Cake



     Chocolate will be everyone's  favorite. Chocolate cake is made with chocolate / cocoa powder. Chocolate cake is a cake flavored with melted chocolate or cocoa powder .
     The history of chocolate cake goes back to 1764 , when Dr.James Baker discovered how to make chocolate by grinding  cocoa beans between massive circular millstones..
     I made this chocolate cake as egg-less . It tasted great and everyone in my family liked this cake.
    Requirements :
    All purpose flour – 1 ½ cup
    Cocoa powder – 4 - 6 tbs
    Butter / oil – 5 tbs
    Powdered sugar – 1 cup
    Milk – 1 cup
    Baking powder – 1 tsp
    Baking soda – 1 tsp
    Fruit vinegar / lemon juice – 2 drops
    For Icing :
    Icing  sugar – 4 tbs
    Lemon juice – 2 tsp



    Method :
    Sieve flour, cocoa powder , baking powder and baking soda twice.
    Melt butter , add the powdered sugar and mix till frothy.
    Add the flour mixture , vinegar and milk , mix gently for five minutes and in a single direction.
    Preheat the oven to 180 degree Celsius.
    Grease the baking tray with butter and dust with flour.
    Pour the cake batter to the tray and bake for 20 – 30 minutes or till the knife inserted into the cake comes out clean.
    Let the cake cool and reach the room temperature.
    Icing :
    Mix the icing sugar with the lemon juice and make into a paste.
    Apply this icing on the cool cake.
    Arrange the cherry on top.

    Refrigerate the cake for 30 minutes and serve.
    Eggless chocolate cake is ready to serve.

    Notes :
    Always mix the cake mixture in the same direction.
    Adding vinegar activates the baking powder.
    Always mix the flour mixture to the wet ingredients just before baking to get soft cake.

    Chocolate burfi



     Everyone will like chocolate. There is no age limit to like chocolates. 
       This choclate burfi will be perfect for those who loves choclate.
       This chocolate burfi was a huge hit in our family. This is simple and easy to make with few ingredients.
    Requirements:
    Maida – 1 cup
    Sugar – 2 cup
    Milk powder – 2 tbs
    Coco powder – 2 tbs
    Ghee – 4 tbs
    Milk – ½ cup
    Chopped nuts 

    Method :
    Mix maida , coco powder , milk powder, sugar and milk together.
    Add about a cup of water and mix well without any lumps.
    Heat a pan , add about two tbs of ghee and the dissolved mixture.
    Stir continuously for about 15 minutes in low flame .
    The mixture will start thickening , add the remaining ghee and stir continuously.
     After few minutes , the burfi mixture won’t stick to the pan. Take off from flame and spread evenly into the greased tray.
    Allow to cool for 10 – 15 minutes. Cut into desired shapes.
    garnish with chopped nuts.
    Store in air tight containers.
    Chocolate burfi is ready to serve.
