Rajma Tikki / Rajma Cutlet / Red Bean Cakes



 

Rajma is the Hindi word to refer the kidney bean / red bean. It is named for its visual resemblance in shape and color to a kidney . This is  protein rich and good for the young childrens.






 These spicy redbean cakes will be excellent starter and easy to make in large numbers for parties.

 As all the lentils are protein rich , it is good and healthy snack for tea time. It also makes a excellent starter when served along with tomato sauce.


 This recipe requires few and easily available ingredients in everyone’s pantry. The time required to make this also less.

Requirements :
Rajma / Red bean – 1 cup
Onion – 1
Wheat flour – 2 tbs or more
Semolina  - 2 tbs
Ginger garlic paste – ½ tsp
Roasted peanut – 2 tbs
Red chilli powder – ½ tsp
Garam masala – ½ tsp
Coriander powder – ½ tsp
Cummin powder – ¼ tsp
Amchur powder – ½ tsp
Chopped coriander leaves – 1 tbs
Salt as required





Method :
Soak the rajma overnight and pressure cook for two whistles.
Crush the roasted peanuts. Chop the onion into fine pieces.
In a bowl , add the cooked rajma and mash with the hand.
Add in the roasted peanuts ,  chopped onion , coriander leaves and mix well.
Now , add all the dry masalas , ginger garlic paste and mix well.
Add in the flour and semolina and mix well. If the mixture was more sticky add in a spoon of flour extra and mix well.
Make this mixture into small balls and flatten slightly to give a cutlet shape.

Heat the griddle and spread a spoon of oil , place two of the shaped tikkis and cook with a spoon of oil .

It can also be deep fried. I cooked in tava with less oil.



Cook till the both sides are slight brown and crisp.
Cook the remaining shaped tikkis.

I got around 12 tikkis.

Crispy Rajma tikkis are ready to serve.


Serve along with the tomato sauce.

Peanut (ground nut) cutlet



 Groundnut are rich source of niacin. It also contains fat which is essential for young children.
Requirements :
Groundnut ( roasted ) – 1 cup
Potato – 3
Onion – 1
Ginger – 1” piece
Garlic – 5 cloves
Green chili – 5
Garam masala – ½ tsp

Method :
Coarsely ground the groundnuts.
Heat oil in a pan , add chopped onion , green chili , ginger and garlic.
Sauté  for few minutes.
Add groundnut powder , garam masala and required salt.
After few minutes add mashed potato and mix well.
When cools , make into patties , spread in bread crumbs and shallow fry.
Serve with tomato sauce or ketchup.

Soya granules cutlet



Soya is rich in vitamin B-12. If womens take this regularly, they can avoid menopause complications.
Requirements:
Soya granules    - 200g
Potato             - 2nos
Onion - 1 nos
Peas - ½ cup
Chilly powder-1tbsp
Garam masala- ½ tsp

Method:
Soak soya granules in hot water for few minutes, and then squeeze the excess water.
Grind to fine granules in the blender along with cooked peas.
Heat oil; add chopped onion, mashed potato, soya granules sauté for few minutes.
Add chilly powder, garam masala and required salt.
Then add mashed potato sauté for few minutes.
Make into desired shapes and spread in bread crumbs and shallow fry.
Serve with tomato sauce.

Lauki ( Bottlegourd ) patties



This recipe is my innovation. As I don’t know what to do with this  veggie other than gravy. So I tried this way . all my family members liked the dish and no one find it was made with lauki. I had combined capsicum in this , which gives unique aroma to the dish.as all know this veggie contains a lot of water content which helps in weight reduction.  

Requirement :
Grated lauki – 1 cup
Capsicum (finely chopped ) – ½ cup
Garam masala - ½  tsp
Chilly powder   -1 tbs
Potato (boiled) -1
Panner (grated) – 2 tbs
Gram flour – 2 tbs
Bread crumbs
Oil
Method :
Heat oil in a pan , sauté lauki and capsicum till partially cooked.
Add chili powder , salt , garam masala and sauté well.
Add smashed potato and panner , mix well.
Now sprinkle gram flour and mix well. This enhances taste.
Make into small round shaped patties , spread in bread crumbs and shallow fry.
Lauki patties is ready to serve.
Serve with tomato sauce / ketchup.

Chana (bengalgram dhal ) cutlet



Cutlets are most preferred snacks in india. This is one of my variation of usual cutlet.
Requirements :
Chana (cooked ) – 1 cup
Potato  (boiled ) – 3
Chilly powder – 1 tsp
Garam masala – 1 tsp
Oil
Bread crumbs

Method :
Coarsely grind chana .
Heat oil / ghee sauté chana mixture and mashed potato.
Add chilly powder and garam masala along with salt.
Make into round shaped patties and spread over bread crumbs and shallow fry in oil.
Serve with tomato sauce and chopped onion.

Sweet potato cutlet




Requirements:
Sweet potato - 200g
Potato   - 1
Onion - 1 nos
Peas - ½ cup
Chilly powder-1tbsp
Garam masala- ½ tsp


Method:
Heat oil; add chopped onion, mashed potato and sweet potato sauté for few minutes.
Add chilly powder, garam masala, mashed peas and required salt. sauté for few minutes.
Make into desired shapes and spread in bread crumbs then shallow fry.
Serve with tomato sauce and chopped onion.
