Corn Potato paratha



 This is a stuffed paratha with potato and sweet corn. As this is a stuffed paratha , no sidedish is needed.
I t is a excellent lunch box recipe and easy to feed kids with corn and potato.

Requirements :
Wheat flour – 2 cup
Sweet corn – ¼ cup
Potato – 2
Chilli powder – 1 /4 tsp
Garam masala – ¼ tsp
Green chilli - 2
Salt as required
Oil as required


Method :
Mix the wheat flour , required salt and water and knead into a soft smooth dough .
Cover and let it rest for 15 minutes.
In the mean time , boil the sweet corn and mash roughly.
Bioil and mash the potatoes.
Add the corn , potatoes , chilli powder , garam masala and required salt . mix well and shape into small lround balls.
Knead the dough again and make into small lround balls.
Roll each ball into a thick paratha and place the stuffing in the center and cover well.
Press gently again.
Heat the tawa and cook the paratha on both sides with a spoon of oil.
Corn potato paratha is ready to serve.
Serve with any gravy or raita.

We had it with the corn peas and capsicum gravy.

Corn pulov



  Corn pulov will be the best recipe for lunchbox. If we have fresh corn or frozen corn in hand it will be easy to make. Corn (maize ) is good source of potassium and useful source of  phosphorous, iron and thiamine. corn is used to produce corn flakes , corn meal and corn flour. It is used world wide.
Requirements:
Corn – 1 cup
Basmati Rice – 1 cup
Coconut milk – 2 cup
Oil / butter – 2 tbs
Mint leaves – ½ bunch
Coriander leaves – ½ bunch
Bay leaf -1
Onion – 1
Garam masala – 1 tbs
To grind :
Ginger – 1’’ piece
Garlic – 6 cloves
Green chilli – 8
Grated coconut – 2 tbs
Cashew nuts – 10
Mint
Coriander leaves

Method :
 Cook the corn separately.
Grind the togrind ingredients to a fine paste.
Heat butter , add bay leaf , cinnamon , cloves , ginger garlic paste, onion and sauté well till translucent.
Add the grounded masala and sauté till raw smell leaves.
Add cooked corn and mix well.
Add rice and sauté well.
Add coconut milk and required salt.
Allow to cook for two whistles.
Corn pulov is ready to serve.
garnish with fried cashews.
Serve with raita.

Sweetcorn Gravy



Ingredients:

Sweet corn - 1 cup (Shredded)

Onions - 1 large
Tomatoes - 1
Green chillies - 2 
Curd – ½  cup
Chilly powder - 1 tsp
Turmeric powder - a pinch
Garam Masala - 1/2 tsp
Sugar - 1 tsp
Salt - for taste
Coriander leaves

To grind :
Coconut - 1/2 cup
Poppy seeds - 3 tsp
Cashew nuts - 10






Method:

Heat oil in a pan add sugar ,  onions, tomatoes and chillies and saute till they turn golden brown.
Add the ground coconut paste and cook till oil separates.
Add  corn, turmeric powder, garam masala, chilly powder, and salt.  
Add  the beaten curd and mix well.
Add some water to bring it to the required consistency. 
Cover and cook on low flame for 10 minutes. 
Garnish  with coriander leaves.
