Spicy Roasted Chickpea

   For this November’s Homebaker’s challenge – Diwali bakes. There are many options like nankhati , mathri etc. I choose to bake this spicy chickpeas as we all like spicy crispy snacks.







    Actually , these spicy chickpeas are deep fried in oil . This is a recipe with less oil and is baked.

Requirement :

 Chickpea – 5oo g

Chili powder – 1 – 2 tbs ( depends on spice level )

Vegetable oil – 2 tbs

Salt – 1 tsp

Garlic – 4 cloves

Mixed herbs – ½ tsp

 


Method :

Soak the chickpea overnight and cook till smooth drain the water  and pat dry with kitchen towel.

Peel the garlic and grate.

Add the chickpea to a large bowl  along with chilli powder , salt , mixed herb , garlic and oil.

Toss well so each chickpea is coated with masala.

Bake at once after marinade. I left it to rest for 2 hour and baked.

Arrange the chickpeas in single layer on a baking tray lined with parchment paper.

Preheat oven to 200*C and bake 15 minutes.

Stir the chickpeas and bake again for 15 minutes.

Turn off the oven and let it cool in the oven.

Then store in airtight containers.


Spicy roasted chickpeas are ready to munch on…..

 

Notes :

Canned chickpeas can be used – use 2 can for the above measurement.

Garam masala or Mexican seasoning or black pepper or sumac can be used.


Olive oil can be used or any oil of your choice.

Banana oats Bar #Homebakerschallenge

      For October  Oats recipes were choosen for the Home bakers challenge. I am posting after a long time for this challenge. 


  This is the easiest and healthy snack bar with only four ingredients. We all liked the oats bar with the crunchiness of the nuts and pieces of dates in every bite. It will be perfect snack for snack box to kids and even for adults.

Makes 9 squares.






Requirements :
2 large, very ripe bananas
1 teaspoon vanilla (optional) 
2 cups rolled oats
1/2 teaspoon salt (optional) 
1/4 cup pitted, chopped dried dates 
1/4 cup chopped nuts — such as walnuts,  almonds , cashews
Grated nutmeg or cinnamon (optional)





Method :

     Preheat the oven to 180 * C / 350 * F and lightly grease a 9 X 9 inch square baking dish with butter.
 Chop the nuts used and  the pitted dates to small pieces.
    Peel the skin of the banana and mash well. Gets about 1 cup of the mashed banana. You can measure the mashed banana and use in the recipe.
    Stir in the vanilla essence and oats . Add  a pinch of salt to enhance sweetness.
  Stir in dates and nuts, so that all are combined well.




  Add the prepared mixture on the greased baking pan and pat evenly.
 Sprinkle the nutmeg / cinnamon powder on top.
 Bake for 30 minutes or until the edges just begin to crisp up.


Let it cool and cut into bars of desired size.




Banana oats bar are ready to be served.

The bars can be stored in room temperature for 5 days.

French Sable’( Biscuit ) / Biscuit Sable’s / Eggless French Shortbread Biscuits


   Sable’ is a French round shortbread biscuit , originates in Caen , in the province of Lower Normandy.
  According to the letters of the Marquise de Se’vigne’ , the biscuit was created for the first time in Sable’- sur – Sarthe in 1670.
  The French word sable means sand perhaps relating to these soft ,delicate , crumbly texture biscuits and their golden colour.


Among the most  well- known Sable’ recipes are those of La Me’re Poulard and the biscuits of Saint Michel and Pont – Aven.
Sable’s can be flavored with almonds , lemon or orange zest.

  French shortbread biscuits are very famous and they melt in mouth bcoz of the butter. Eggs can be used in this biscuits.


Requirements :
All purpose flour – 2 + ½ cup
Softened butter – 1 cup
Powdered sugar – ½ cup
Vanilla extract – ½ tsp
Milk / water – 1 tsp



Method :
Beat the butter and sugar together until they turns light and fluffy.
Add in the vanilla extract , milk or water , beat for few minutes.
Now add the flour and mix well to form a smooth dough.
Roll the dough between two ungreased baking sheets and flatten slowly with a rolling pin.
Using a cookie cutter , cut the cookies into round shapes.
With a fork prick on the center of each cookie.
Transfer to the baking tray and bake in the preheated oven for 15 minutes @ 220* C.
Cool the cookies and store in air tight container.


French sables is ready to serve.

Mango chocolate marble cake – Eggless








    This was the challenge for the home baker's challenge suggested by sangeetha akka of spicy treats . Th is was the second challenge in this baking group. The combination of mango and chocolate was so delicious.
       I made an eggless cake with butter .


Requirements : 
All purpose flour – 2 cup
Baking powder – 2 tsp
Baking soda – ½ tsp
Salt – ¼ tsp
Sugar – ¾ cup
Mango pulp – 1 cup
Vanilla extract – 1 tsp
Cocoa powder – ¼ cup (mix with 2 tbs warm water)
Butter – ½ cup
Yogurt – ½ cup

Method :
 Sift the flour, baking powder, baking soda, salt together thrice.
In a bowl, whisk butter, sugar ,  , mango pulp , vanilla essence and yogurt together.
Add the flour mixture to these and fold in .
To the half of  the batter , mix the cocoa powder mixed with warm water and mix gently.
Grease the baking pan, I used the flower pan , and pour both the batter alternatively to get your desired pattern , make swirls as you like.

Tap the pan gently to set the batter evenly and bake in a preheated oven @ 220*C for 30 – 30 or till the skewer inserted comes out clean.


Take off from the oven and let it cool.
Demould , slice and serve.



Delicious eggless mango marbled cake is ready to serve.
Note :
I used homemade mango pulp – peel off the skin , scoop out the pulp and grind once and use.
If the batter was thick , add little milk to get the correct consistency.
Instead of yogurt , half cup of milk and half cup of buttermilk can be used.

7 Mini Pizza – Home Bakers challenge



 Hope all know about the Home baker’s challenge . It was a group of home baker’s has to bake a selected recipe. Check here to know more about the group. This group is started by Priya akka of priya’s versatile recipes.
  For this first  month challenge pizza was the chosen recipe by Divya akka of Divya’s culinary Journey.

  There were choices to choose like with or without tomato sauce , with pesto sauce and Indian style naan pizza.
  I choose to make pizza with the tomato sauce. I made totally seven mini pizzas with different toppings.


  I prepared the tomato sauce in my home by using Indian garam masala as I didn’t get Italian seasoning here.
  Pizza  is an oven baked , flat , round bread typically topped with a tomato sauce , cheese and various toppings. Pizza was originally originated in Naples , Italy. This dish has become popular in many parts of the world.

Requirements :
For the dough to make  Pizza crust :
Warm water – 1 cup @ 110*C
Sugar – ¼ tsp
Dry yeast – 2 tbs
All purpose flour – 4 small cup
Salt – 1 tsp
Sugar – 1 tbs
Vegetable oil – ¼ cup
For Toppings :
Indianised Pizza sauce / Tomato sauce – 1 cup
Cheese slices
Onion
Green Capsicum
Mushrooms
Potato slices
Caramelized Fig
Apple
Spinach leaves
Cauliflower floret - 1
Method :
Making of dough :
In the warm water , add the sugar and yeast dissolve and let it for Proof for about 10 – 15 minutes.
In a bowl , add the flour , sugar , salt  and mix well.
Add in the vegetable oil / olive oil and mix well.
Add in the proofed yeast and mix well.
Knead well to make a soft smooth dough.
Place this dough in a oiled bowl and cover with a cling wrap and let it double for 2 hours or more.
After the first rise , Deflate and fold in the dough onto itself four or five times .

Cover again and keep in a warm place for the second rise.
After the second rise , dough is ready to shape into a thin / thick crust according to the need.
Making of Pizza crust :
 Punch the dough and transfer to the kitchen counter.
Cut the dough into required pieces with the sharp knife or bench scraper.
Knead each part four or five times and shape into balls.
Cover the remaining balls while shaping a dough ball to avoid drying up.
 I was using the nonstick baking tray for baking this pizza so; I placed three dough balls in the tray and pressed it to make a thin crust.
 Press the dough balls  with the four fingers of the hand.
While pressing start from the center and towards outside. Make sure to keep a thick layer at the outer rim – raised border.
 Prick in the crust leaving the raised edge with the fork for even cooking and to avoid raising while baking.
Making of Indianised Pizza sauce :
 Take about 6 large tomatoes.
 Boil water in a pan , add the tomatoes to the hot water and cover it with a lid.
After few minutes, take out the tomatoes and peel out the skin.
Add this to the blender along with a small stick of cinnamon and two cloves and grind coarsely.
Heat about a teaspoon of butter , add one chopped onion and sauté.
Add in about chopped 10 cloves of garlic and sauté well for few minutes.
Now , add in the tomato puree and mix well.
Let it simmer for ten minutes .
Add in a tablespoon of sugar and half a teaspoon of salt and mix well.
Add about half a teaspoon of garam masala or chilli powder and mix well.
At this stage , melted butter will separate on top of the sauce.
Take off from flame and let it cool.

Store this in airtight container.
Indianised Pizza sauce is ready.
Assembling the Pizza :
Apply the pizza sauce on the shaped pizza leaving the raised egde.












I used different toppings for the seven pizzas.
1.              Mushroom onion Pizza :
I used chopped mushroom pieces and sliced onion for this pizza.
2.              Smiley Pizza :
I thought of making a smiling face . Used cauliflower floret on top , assume it as head or hair in the forehead. Capsicum pieces are used as eyes and nose. An onion slice is used as mouth.
It looked as face before baking , it is not as it after baking.




3.              Capsicum onion Pizza :
   In this pizza I used onion slices and capsicum pieces .    arranged in the circular pattern.
For these three pizzas , I placed half of the cheese slice on the top.


For the below three pizzas , I placed the cheese slice above the sauce and arranged the toppings above that.
4.              Fig Apple Pizza :
Chop the apple just before arranging to avoid blackening.
I arranged store bought caramelized fig slices and apple pieces for this pizza.
5.              Spinach onion pizza :
I arranged spinach leaves and onion slices on top of the cheese slice.

6.              Apple capsicum Pizza :
I arranged capsicum rings and apple pieces for this pizza.

7.              Potato capsicum pizza :
I used capsicum rings and potato slices in this pizza. I used a thicker slice to make it visible after baling too.

 For this pizza I used small bits of the cut cheese slices.
Baking of pizza:
As I am having automatic oven, I just on the fast preheat option , it takes less than five minutes.
If using pizza stone for baking, pre heat the oven for 30 minutes.
 I baked these pizzas in three batches.










I made first three pizzas at first and set it to bake.
Second Batch Pizzas :






Shaped the other three pizzas and topped while the first batch is baking.

I baked the pizzas @ 220* C @ convection mode for 15 – 20 minutes or till the pizza crust is slightly golden brown.
 My cheese slices didn't melt fully , any way pizzas are yummy.
Slice and serve warm.
