Roti Gambang / Gambang Bread – Indonesian Traditional Bread




    For August ssshhhh….. secretly cooking. I was paired with Amirta Iyer. We has to cook dishes from Indonesian Cuisine. As there are many dishes were Non vegetarian , I decided to make this bread.





  Roti Gambang / Gambang Roti is the traditional bread of Indonesia.  This bread originated from Betawi ( Jakarta ) , which was rooted back to Dutch colonial era. This bread is known as tea or coffee mate.  




 Though this is a bread  , it has the crunchiness of the cookie too. I followed the recipe from here. I skipped the egg yolk which was used in original recipe. I used Butter instead of Margarine.

                                      Requirements :

250 g Java red sugar, grated (you can substitute with palm granulated sugar)
175 ml water
375 g all purpose flour
125 dry fine bread crumbs
25 g milk powder
1/4 tsp salt
1 tsp baking soda
2 tsp baking powder
2 tsp cinnamon powder
1/4 tsp vanilla powder/vanilla extract
2 egg yolks ( optional )
200g Butter
3 Tbsp water, for brushing
3 Tbsp sesame seeds

Method :

   Boil  the Java red sugar with the water until dissolved and become a syrup consistency. Let it cool.

In a bowl , mix together flour , bread crumbs , milk powder , salt , baking soda , baking powder , cinnamon , vanilla. Add in egg yolk , if using.

Pour the sugar syrup and knead well for ten minutes.

Add in the butter and knead again . Cover the bowl with cling wrap and let it rest for 30 minutes.

Divide the dough into equal parts about 12 will come.
Shape the dough balls  into oval shapes and arrange in the baking tray.




Brush with water on top of the bread and sprinkle sesame seeds on top.
Bake on a preheated oven @ 200 * C for 20 – 30 minutes.
Makes around 12 breads.






These breads tastes good with flavor of Java sugar.

Eggless Mini Mango Bread #BreadBakers





  For this Month’s Bread Bakers Mirelle from  The Schizo Chef.
gave us the theme to make bread with stone fruit. The first fruit came to my mind on seeing the theme was the mango.




 As mango is in season and easily available stone fruit in my place , I decided to make bread with it.

  I was hesitant to use it in making yeasted bread , so made this simple quick bread. The colour of bread from the addition of mango puree was so  good and appealing.

 Mango being the King of fruits  and a common fruit in Tropical regions , rich in vitamin A and good for eye sight.



Requirements :

All purpose flour – 2 cup
Sugar – ½ cup
Mango Puree – 1 ½  cup
Baking Powder – ½  tsp
Baking Soda  - ½ tsp
Greek Yogurt – ¼ cup
Cashew

Method :
 Sift together flour , baking soda and baking powder .

 In a bowl , add the yogurt and beat well. To this add the mango puree and sugar beat again.

Now , add the  flour mixture little at a time and fold in , don’t beat.

Pour into mould and place a cashew on top. I used small square muffin mould.

Bake in a preheated oven @ 180 * C for about 15 minutes or till the tooth pick inserted comes out clean.

Let the baking tray cool on wire rack and demould.

Eggless  Mini Mango Bread are ready to serve.

The bread tastes delicious with the flavor of mango.

Note :

I didn’t add any flavoring agent. As we like the mango flavor I made it so.


If you wish you can add cinnamon , cardamom or other flavouring agents.
