Happy New Year – 2014 .
Well , the last year 2013 was a great year for me with lots of ups and down , I learnt a lot from my every experience , hope this new year brings everyone happiness .
Pound cake refers to a type of cake traditionally made with a pound of each ingredients - flour , butter , eggs and sugar. I made this cake as eggless.
Pound cakes are generally baked in either a loaf pan or a bundt mould. It is served either dusted with powdered sugar , lightly glazed . pound cake is a Northern european dish , that dates back to early 1700s.
There are numerous variations on traditional pound cake , with certain countries and regions having distinctive styles.
Chocolate chip pound cake - eggless
Yield : 1 large loaf
All purpose flour – 2 cup minus 3 tbs
Corn flour – 3 tbs
Sugar – 1 cup
Baking powder – 1 tsp
Vegetable oil – ½ cup
Semisweet chocolate chips – ¾ cup
Vanilla extract – 1 tsp
Milk – ½ cup
Sieve together the flour and baking powder thrice.
In a bowl , mix oil and sugar well.
To this add the milk and vanilla extract , mix well.
Now , add the flour mixture little at a time and mix gently.
Add in the chocolate chips and mix once.
Grease the loaf pan and pour the batter till half the mould.
Tap the cake mould to level the batter equally.
Sprinkle some chocolate chips on top.
Preheat the oven to 220 * C and bake for 20 minutes.
Reduce the temperature to 180* C and bake for another ten minutes.
Check with a skewer whether the cake is cooked well.
Let it cool and unmould.
Cut into slices and serve.
Chocolate chip pound cake is ready to serve.
