This recipe is of a delicious chapatti roll filled
with a spicy mushroom mixture. Adding cornflour makes the chapatti crisp.
Requirements :
For roti:
Maida – 1 cup
Corn flour – 2 tbs
Cooking soda – ¼ tsp
Butter – ½ tsp
Salt as required
For filling :
Mushroom ( chopped ) – 2 cup
Garlic – 3 cloves
Ginger – 1 tbs ( Grated )
Onion – 1
Tomato – 2
Coriander powder – 2 tsp
Cumin powder – 1 tsp
Tomato puree – ½ cup
Garam masala – 2 tsp
Sugar – ½ tsp
Oil – 1 tsp
Method :
For roti :
Mix flour , corn flour ,
soda and salt.
Add butter and make into a
soft dough. Use water if needed.
Rest the dough for half an
hour.
Knead again and make small
balls.
Roll each ball into thin
and cook lightly on both sides using ghee.
For mushroom filling :
Heat oil in a pan , add garlic , ginger and
onion . sauté well.
Add tomatoes and sauté
till mashed fully.
Add the masalas and sugar.
Add the tomato purée and
cook for few more minutes.
Add the mushrooms , salt
and stir well.
Cook for ten minutes.
Serving :
Spread the filling evenly
on all roti and roll it like swiss roll.
Before serving , cook each
roll on the tava with ghee till crisp.
Cut into pieces and serve
hot.
