Dudhi Halwa / Bottlegourd Halwa


 Bottle gourd is known as Dudhi / Lauki in Hindi. Halwa with this watery vegetable was delicious. It tastes similar to the white pumpkin halwa. 
Requirements :
Grated bottlegourd – 1 cup
Sugar – ¼  cup
Ghee – 1 tbs
Milk – 3 tbs
Cardamon powder – a pinch
Green food color – a pinch ( optional )
Cashew or anyother nuts

Method :
Squeeze out the excess water out of the grated bottlegourd.
Melt ghee in a pan , add the bottlegourd and saute well.
When the raw smell of the bottlegourd leaves , add the milk and let it cook in the milk itself.
Now , add the sugar and mix well.
The sugar should melt fully and coated with the bottlegourd.
Add inthe cardamon powder and food color , give a quick stir and take off from flame. By this time the halwa won’t stick to the pan , that is the consistency.
Garnish with cashew and serve.
Bottlegourd Halwa is ready to serve.
Note :
Instead of milk , condensed milk can be added. 
If using condensed milk , add sugar according to the requirement.

  8. I had dud hi halwa in a gurati restaurant here, and it was almost pale green color. Yours is attractive green becoz of the food color I guess! :) nice one!
