This was a pulov in which tomato soup is used to make it more flavourful and colorful . This pulov will be excellent lunchbox recipe. This recipe is easy to make with the tomato soup or else use the tomato puree.
Rice – 1 cup
Onion – 1
Tomato soup – ½ cup
Mixed vegetables ( peas , carrot , cauliflower , potato ) – 1 cup
Cinnamon stick – 1
Cloves – 2
Cardamom – 1
Garam masala – 1 tsp
Salt as required
Red chilli powder – 1 tsp
Ginger garlic paste – 1 tsp
Ghee – 2 tbs
Water – 1½ cup
Wash and soak the rice for 15 minutes.
Chop the onion.
Heat ghee in a pressure cooker, add the cinnamon , cloves and cardamom and let it fry.
Add in the chopped onion and sauté wel.
Add in the ginger garlic paste and chopped vegetables and sauté for a minute.
Add in the tomato soup , salt , chilli powder , garam masala , water and mix well.
When the water starts boiling add in the soaked rice and mix well.
Close the lid and cook for two whistles.
When the pressure releases , open the lid and stir gently.
Tomato soup pulov is ready to serve.
Chopped mint leaves can be sprinkled on top.
Serve with any raita of your choice.
It can be made in a pan , by cooking rice separately and mixing all together.I find cooking in pressure cooker is easy and time saving.
