Mixed Vegetables in Spinach Gravy






  
 Spinach was our family’s favorite. I will  always try to make dishes from spinach as  to use the leaves from our garden. When I see this recipe in her space , I immediately bookmarked it .

It was a easy , healthy and colorful gravy. We had this gravy with chapati and it was a excellent combination.
 This gravy will be best to make kids have the greens.

Requirements :
Spinach – 2 cup
For masala :
Onion – 1
Tomato – 3
Red chilly – 4
Ginger – 1’’ piece
Garlic – 4 cloves
Garam masala – 1 tsp
Chilli powder – 1 tsp
Coriander powder – 1 tsp
Mixed vegetables
( carrot , beans , peas ) – 1 ½ cup
Salt as required
Oil / ghee – 1 tbs



Method :
Wash the spinach leaves in running water.
Boil around 4 cup of water and take off from flame.

Add half teaspoon of salt and sugar. Add in the spinach leaves and close with a lid .
Let it be for 5 minutes. Drain the water and wash with cold water. – Blanching of spinach
Boil the chopped vegetables in water along with the salt and sugar to retain its color.
For masala :
Heat oil in a pan , add ginger , garlic and onion. Saute well.
Add the  chillies and tomato , saute till the raw smell leaves.
 Add in the chilli powder and coriander powder , mix well.
Add little water and let it cook for few minutes.
Let it cool.

Grind this masala along with the blanched spinach.
It can be grinded separately , I grinded both together.
Cook the chopped vegetables and cook with a cup of water.

Add this masala to the same pan and mix well.
Add in another cup of water .
Let it simmer for few minutes.

Now , add the garam masala and boil for another minute.

Take of from flame and serve with a dallop of butter.

Mixed vegetables in spinach gravy is ready to serve.
Serve with roti , phulka or rice.

  2. Lovely pairing for the roti. My fav is spinach too, what these are easily available at an affordable price over here. The combination of flavors worked right for an incredible outcome.

    hasnt it come out wonderful.. when i had this first i loved the simplicity of this dish and since then i make it often
    good enough for fussy kids who wont eat spinach
