Moong sprouts salad



 Moong sprouts when eaten raw , it will be having a sweet taste. So , I decided to make a salad of this. This salad is simple and easy to make.
Requirements :
Moong sprout – 1 cup
Chopped onion – 1 tbs
Chopped tomato – 1 tbs
Green chilly - 1
Coriander leaves – few
Lemon juice -  2 drops
Salt a pinch

Method :
 For sprouting :
 Wash and soak the  whole moong for a day. Drain the water and refrigerate for two days. Sprouts will come out of the bean.
Slit the green chilly and remove the seed and chop finely.
Take a bowl , add moong sprout , onion , tomato , chilly , salt and mix well.
Add few drops of lemon juice before serving.
Sprinkle fresh coriander leaves.
Moong sprouts salad is ready to serve.
 Note :
Green chilly can be avoided and chat masala can be used.

Baby potato gravy



 I love baby potatoes a lot. They are looking lovely as well as tasty than large potatoes. In our home , we frequently buy these baby potatoes.
This gravy will be perfect combo with roti / phulka.
Requirements :
 Baby potato – ½ kg
Onion – 1
Tomato – 3
Ginger – 1’’ piece
Garlic – 4 cloves
Garam masala – 1 tsp
Chilly powder – 1 tsp
Oil – 1 tsp
Salt as required
Coconut paste – 1 tbs



Method :
Boil the baby potatoes and remove the skin.
Prick the potatoes with fork , so gravy will enter inside.
Grind onion , tomato , ginger and garlic into a fine paste.
Heat oil in a pan , add the grounded masala and sauté till raw smell leaves.
Add the potatoes and salt.
Add  chilly powder and garam masala and mix well.
Add a cup of water and allow to cook for ten minutes.
Add the coconut paste and cook for another five minutes.
Baby potato gravy is ready to serve.

ROASTED GRAM LADOO



 Roasted Bengal gram is known as pottukadalai in tamil.  This will be used in many south Indian homes daily for making chutney. It is rich in protein and this ladoo will be healthy snack for kids too. As i used brown sugar , it is good for young childrens growth. This is my mom's recipe.

Requirements :
Roasted gram dhal – 1 cup
Brown sugar – ½  cup
Cardamom powder  - a pinch
Method :
Grind the roasted gram to a fine powder.

Mix quarter cup of water to the brown sugar and bring it to boil.

Allow to boil till one string consistency.
Mix this sugar syrup to the grounded flour little by little and mix well.

Make into small round balls and let it dry.
Store in air tight containers.
Roasted gram ladoo is ready to serve.

I got about 15 ladoos. It may varies according to the size of the ladoo.

Savory Crescent Cookies



  As I was inspired from many lovely shapes of dinner rolls , I want to try a crescent shaped cookie. I made the dough and my sister anu helped me in making the shape. She had seen how to make a crescent dinner roll in a tv show.
Requirements :
Whole wheat flour – 2 cup
Butter – 1 tbs
Red chilly flakes – ½ tsp
Cumin – ½ tsp
Salt – as required
Sugar – 1 tbs
Water
Baking powder – 1 tsp

Method :
Sift the wheat flour , baking powder and salt together.
Take a bowl , add the butter and sugar mix well.
Add the chilly flakes and cumin , mix well.
Now add the flour mixture little by little and mix well.
Add about quarter cup of water and mix well.
If you feel the dough is dry , can add little more water.


Let the dough rest for 30 minutes.
Take a small ball of the dough and press with the rolling pin into 2’’ thickness .

Cut into small triangles.

Take a triangle out , on the  larger side make a small slit in the middle.

By holding the ends of the larger side of the triangle, roll towards the tip of the triangle.



Repeat with the remaining dough.
Preheat the oven to 180 degree Celsius.
Arrange the crescents in the baking tray and bake for about 20 minutes or till slightly brown.

Let it cool and store .
Savory crescent cookies is ready to serve.

Choco cashew cookies / Christmas cookies



 This is the first cookie I baked, but posting late. This cookie is a simple and tasty recipe. I named  it as christmas cookies because  i used the cookie cutter to make christmas tree and stars.
Requirements :
Maida – 250 g
Butter –  1 tsp
Sugar – 200 g
Cashewnut powder – 100 g
Almond essence – ¼ tsp
Cocoa powder – 1 tbsp
Baking powder – ½  tsp

Method :
Sift maida , cocoa powder and baking powder together.
Mix sugar and butter for a minute.
Add the almond essence and mix well.
Add the cashewnut powder and mix well.
Now , add the flour mixture and mix well without lumps.
Make a soft and firm dough.
If you feel the dough is thick , add a tsp of milk to the dough.
Keep the  dough to rest for fifteen minutes.
Preheat the oven in the mean time.
Take a small piece of the dough and roll into medium thickness and cut into desired shape with the cookie cutter.
Arrange in the baking tray and bake for about 20 minutes at 180 degree celsius.
Cool and store in air tight container.
Choco cashew cookies is read to serve.
 Note :
 As i used  whole sugar it appears as crystal , can use powdered sugar.

Green chicken



  This chicken with mild green colour will be appealing to eyes. It is healthy as we are adding spinach to chicken.
We had this chicken with plain rice. It tasted great and different.
Requirements :
Chicken – 250 g
Spinach – 10 leaves
Mint – 10 leaves
Ginger garlic paste – ½ tsp
Onion – 1
Tomato  - 1
Bay leaf – 1
Chilly powder – ½ tsp
Coriander powder – ½ tsp
Curry leaves
Oil – 1 tsp
Salt as required
Aniseed – ¼ tsp
Green chilly – 2

Method :
Cook the boneless chicken with salt.
Grind spinach , mint , tomato , chilly powder and coriander powder to a fine paste.
Heat oil , add aniseeds and bay leaf.
Add the chopped onion and slit green chilly.

Sauté well till translucent.
Add the ginger garlic paste and grounded masala.

Cook till the raw smell leaves.
Add the required salt and mix well.
Add the cooked chicken pieces and mix well.
Cook for another two minutes.

Take off from flame and serve.
Green chicken is ready.

Honeyed fruit salad



  This is simple and healthy dessert. It   is easy to make with the available fruits that are seasonal fruits.
Requirements :
Apple – 1
Banana – 1
Pomegranate- 2 tbs
Honey – 1 tbs
Lemon juice – 1 tsp

Method :
Dice apple and sprinkle lemon juice over it to avoid darkening.
Chop banana into circles.
Mix all the fruits in a bowl.
Add the honey and toss slightly to coat honey.
Serve chilled along with icecream.
