Badhusha / Indian Donut



   Badhusha is one of the famous sweet in tamilnadu. I was so thinking till I say a post in manjula’s kitchen about Balushahi , it was same as our badhushah.
   I don’t know why this sweet was named as badhushah. Indian donut will be perfect as it resembles donut in shape and also making.
 It  is easy to make with few ingredients. I learnt this recipe from my mom.
 Requirements :
All purpose flour / Maida – 600 g
Butter – 200 g
Sour curd – ½ cup
Cooking soda – ½ tsp
Oil for frying
Sugar – 4 cup
Rose essence – few drops

Method :
Sieve the maida .
In a bowl , mix butter and cooking soda till it is frothy.
To this add the curd and mix well.
Now , add the flour and knead well.
Sprinkle little water , if it is needed for kneading.
Cover the dough and allow it to rest for half an hour.
Sugar syrup :
Mix the sugar with two cup of water and bring to boil.
The consistency of the syrup must be lightly sticky , when we take it between fingers – method of checking the syrup consistency.
Add rose essence to the syrup after taking off from flame..
Making of badhusha :
 Take a small ball from the dough and press it to flat .
Make a impression in the center with the thumb.
Deep fry the badhusha under low flame.
Cook on both sides till golden brown.
Soak in the syrup for about an hour.
Then take out and store.
Badhusha is ready to serve.
Garnish with grated nuts.
